GEOLOGY
The grapes come from the village of Pommard, located between Beaune and Volnay, in the south of the Côte de Beaune. Soil: limestone and some clay. Southeast exposure. 100% Pinot Noir. Guyot with different annual works of the vine (pruning, trellising on wire knotting, stripping).

VINIFICATION
Harvest by hand. The grapes are sorted twice (during the picking of the grapes and on the sorting table), then partially destemmed (if necessary, depending on the quality of the berries a third sorting is done with our optical sorter). They are then put in stainless steel tanks thermo-regulated. The alcoholic fermentation can then begin, with yeasts naturally present in the berries, and will last about 3 weeks. Very soft windings to respect the raw material and in order to obtain the purest and most representative wine of the soil. Gentle pressing.

The wine is put in French oak barrels (15% new oak) after a light settling. The malolactic fermentation can then begin thanks to the bacteria naturally present in the juice. The aging lasts 14 months on fine lees. We follow the lunar calendar for bottling without fining or filtration: it is a fruit day.

TASTING NOTES
Pommard has a dark red color with intense aromas of cassis, musk and game. Well marked acidity and a softness that appears only after a minimum of maturity. Tannic and robust wine.
